1.Chillie sambal: fry 2 dried chillies. grind these with half a tomato and some water
2. lightly fry some tofu and set aside
3. saute 1 onion and some ginger in olive oil
4. add a handful of torn lime leaves
5. Add the sambal and light soya sauce and fry
5. add the tofu
6. add vegetables ( carrot, snow peas, brocoli)
7. add noodles
8. add bean sprouts
9. toss everything to evenly coat noodles with the sambal sauce and vegetables.
10. final 2 min add torn spinach leaves ( so it doesn't wilt and over cook)
11. switch off fire. add juice from half a lime
.
12. add chopped coriander and dried onions and eat hot.
